Honey ginger chicken is a quick recipe I love to whip up when I’m low on time or I get dinner started late. It only requires 4 main ingredients (rice, diced chicken tenderloins, honey, and ginger) and a few seasonings (salt, pepper, garlic powder, onion powder, and red pepper flakes if you want to spice it up).
I start my rice first since the chicken won’t take long to prep at all. Once rice has started, I dice my chicken tenderloins in about 1 inch cubes (you can choose to cook the tenderloins whole if you’d like, but they quick quicker diced and easier for little ones to eat). Sprinkle on my seasonings, you don’t need too much, and then grate about 1 tablespoon of fresh ginger and 2 tablespoons of honey. Let Mckenzie mix it all up, sprinkle a bit more salt, then toss in a pan and sauté until chicken is cooked. You can garnish your chicken with red pepper flakes for those who like a kick or just parsley if you’re feeding little tummy’s. Serve with your choice of veggies (fresh green beans taste delicious tossed in left over sauce in the pan)
